Sky-High Hummingbird Cake ~ Hummingbird Cake is a Southern dessert which was said to have originated in Jamaica. It is very similar to Carrot Cake, but has no carrots, but rather bananas, pineapple, cinnamon, and pecans. Filled and frosted with Cream Cheese Icing. This recipe is on the cover of the Southern Living Homestyle Cookbook…which is full of wonderful Southern recipes!
